Loin Style Choice

Bone-in loin provides T-bone and porterhouse. Boneless loin provides tenderloin and NY striploin, with lower total finished weight due to bone removal. Only 5 lbs of Porterhouse (T-Bone, where NY portion has sirloin) are on a side of beef.
